As a Thai gal, I doctor up every dish I eat with some kind of sauce, chili, or condiment.  For my everyday cooking, I keep it simple and quick.  Here are my favorite condiments that I use frequently.

Top 3 Thai Condiments for Everyday Cooking and Eating

Golden Mountain or Maggi Sauce

This is kind of the Thai version of soy sauce or seasoning sauce.  Both are pretty easy to find in any Asian market and in most traditional markets.  Costco actually carries giant bottles of Maggi Sauce!  It is used to flavor many stir fries and egg dishes.  Splash a few drops into a stir fry or fried rice for extra flavor.  Try marinating some pork or chicken in this sauce before throwing it into a stir fry!  My son’s favorite omelette is what he calls, his Thai omelette.  Whisk up some eggs and drop several splashes of Golden Mountain or Maggi sauce into your eggs.  Beat well.  In a frying pan, heat up 3-4 tablespoons of oil (canola, vegetable, or avocado) until hot.  Carefully pour egg mixture into hot pan.  Wait for it to start setting, don’t stir.  Then while lifting an edge of the eggs up with a flat spatula, gently tip the pan in that direction, allowing the runny parts to glide into that spot; repeat on other side. This allows for your omelette to rise and add some layers so that it is not so flat. When the bottom is nice and golden, flip your omelette.  Allow to cook until golden brown.  Note:  a Thai omelette is not cooked the way you would cook a French omelette.  Here, you would use a higher flame and you want the omelette to turn golden brown.  Serve it as is or over rice.  I also like mine with Sriracha hot chili sauce all over it!  And of course that leads me to my next favorite….

Ingredients
  1. 2 cups sweet rice, soaked over night, or at least 4 hours
  2. 4+ Mangoes - as many as you want
  3. 2 cans full fat coconut milk (Chao Koh, Mae Ploy, or Trader Joes are my favorite)
  4. Any sugar (white or brown is fine) or maple syrup
  5. A couple of Tbs. of sesame seeds
Instructions
  1. Soak the sweet rice over night, or at least 4 hours. This will help make it glutinous/sticky. Rinse well with fresh water. Add water up to the line in rice cooker depending on cups of rice. Cook in rice cooker on sweet rice setting. In the meantime, heat coconut milk on low heat, avoid boiling. Add sugar or maple syrup for desired sweetness. Peel and cut mangoes into bite size pieces. Toast sesame seeds in small pan until golden; be careful, seeds can burn quickly. Once rice is done, serve while warm, drizzle with sweetened coconut milk, layer mangos on top, and sprinkle with sesame seeds.
Notes
  1. Sorry folks, I don't know how to do sticky rice the old fashioned way, the way my dad used to do it on the stove, which involves cheese cloth, a steamer, and a spray bottle. Nope. This version is done in a rice cooker. Much less intimidating and accessible.
  2. As you've probably noticed, I make suggestions on different quantities, depending on how much you want to make. Adjust amount of sugar, mangoes, and/or coconut milk when serving depending on your taste!

For Okra
  1. 1 tb. canola oil
  2. 1/4-1/2 of onion thinly sliced
  3. 1 lb. fresh okra rinsed and dried completely
  4. salt to taste
  5. 1 tsp. chopped garlic
  6. 1/2-1 tsp. chopped green chili such as jalapeño (opt.)
  7. 1 tsp. cumin seeds
  8. 1 small tomato diced
  9. 1 tsp. ground cumin
  10. a squeeze of lemon
For Friend Egg
  1. Small nonstick pan
  2. 1/4-1/2 cup olive oil (enough to fill pan with about 1/2 inch oil
  3. fresh eggs
For Okra
  1. Rinse okra well and dry completely. Slice okra. To reduce some of the slime from okra, either dry sliced okra in refrigerator overnight in single layer, or microwave in single layer for 1 minute. Heat oil on medium heat then fry sliced onion until translucent. Add okra, pinch of salt, chili, garlic, and cumin seeds. Saute for a couple of minutes, add chopped tomatoes. Saute briefly, then sprinkle on ground cumin and squeeze lemon over dish. Mix and serve.
For Friend Egg
  1. Cook one egg at a time. Heat olive oil on medium to medium high heat until oil is hot. Carefully crack and slide egg into hot oil. Let egg fry until the edges get nice and crisp. Carefully spoon hot oil over egg if you like it a bit more cooked. Remove from pan with a slotted spatula when yolk reaches desired doneness. Serve with okra. Enjoy!
Notes
  1. If you are unsure about okra, trust me, this recipe will change your mind! I love this with a fried egg, and olive oil fried egg, in my opinion, is the most delicious! Also very good without egg, and served with hot naan bread.

Chips and Salsa - Semi Homemade Quick and Easy Recipe

For the chips
  1. At least 1 cup oil (vegetable, canola, or preferably avocado); enough to cover at least 1 inch bottom of pan
  2. At least 1 dozen corn tortillas
  3. Salt
For the salsa
  1. Several ripe tomatoes
  2. A small bunch of cilantro
  3. 1/2-whole jalapeño
  4. 1 whole lime
  5. Salt
For the chips
  1. Stack and cut corn tortillas into triangles.
  2. Heat the oil in a pan over medium heat.
  3. Carefully slide cut tortillas into hot oil, avoid splattering. Do not overcrowd your pan.
  4. Push around and flip tortillas until golden brown.
  5. Remove with tongs or slotted spoon and drain on paper towels.
  6. Salt generously while hot.
For salsa
  1. Chop several ripe tomatoes and the cilantro.
  2. Depending on desired level of hotness, finely dice between 1/2 to a whole jalapeño.
  3. Remove the seeds and inner membrane to reduce heat level, include if you like it hot!
  4. Combine in a large bowl.
  5. Roll the lime on a flat surface or cutting board with the palm of your hands to release the juices.
  6. Cut the lime and squeeze over tomato mixture.
  7. Add store bought salsa.
  8. Mix together and salt according to taste.
  9. Serve with the fresh chips.
  10. Enjoy!

  2. Red Curry Paste
  3. Trader Joe's Ready to Eat Steamed Lentils
  4. Trader Joe's Super Firm Tofu
Instructions
  1. Drain, pat dry, and cut tofu into cubes and set aside.
  2. Break up the lentils and place into a bowl and set aside.
  3. Shake can of coconut milk and pour into a pot.
  4. Heat on medium.
  5. Add curry paste.
  6. Add lentils.
  7. Stir.
  8. Add tofu.
  9. Stir.
  10. Heat for 5-7 minutes.
Optional
  1. Add a little soy sauce to season
